THAI EASY GREEN SHRIMP CURRY

 

1 tablespoon prepared green curry paste

1 can @ 14 ounces coconut milk

8 ounces zucchini, cauliflower – papaya or pineapple

2 tablespoons fish sauce

1 tablespoon sugar

As needed water, stock or brown sauce

1 pound cleaned and peeled prawns

 

1.      Lightly sauté curry paste and coconut milk till fluid

2.      Add next five ingredients and simmer until tender

3.      Add prawns and simmer until just done
