Use any meat you wish as long as you mince it, ground beef, turkey, or firm tofu can also be used and serve on greens or rice.

2 tablespoons lemon, /lime juice

2 tablespoons fish sauce

2 tablespoons stock/water, canned will do

1 ounce minced chilies/cayenne, adjust to taste

2 tablespoons sugar, to taste

8 ounces minced meat, raw

3 ounces diced red onion

3 tablespoons lemon grass sliced

2 each, crushed Kaffir lime leaves, citrus leaves

2 ounces fresh mint leaves

4 ounces fresh basil leaves, Thai if available

2 ounces green onions sliced

2 tablespoons brown ground rice, optional

2 tablespoons peanuts, crushed


1.                  Combine first five ingredients in sauté pan and bring to a boil

2.                  Add the minced, ground protein or tofu and cook until firm

3.                  Add the next seven ingredients and cook for one minute or so

4.                  Serve on rice, shredded romaine or in soft lettuce cups

5.                  Toast peanuts till crunchy to dress on top of laab

Roast a handful of rice in a hot pan till brown then crush and add to various dishes for texture.
